This is a blend of Honduran coffees from a small but excellent cooperative in the Casitas district of Honduras. Notes of green apple, caramel, and melon.
Honey processing is a method of drying the coffee immediately after harvesting in which the mucilage is still left on the bean after the fruit has been removed. This allows the mucilage to slightly ferment on the bean and add a sweet complexity to the coffee.
